Cool Lime Cheesecake

Last Thursday we had a family game night, despite the absents of my granddaughter and her mommy and daddy.  Our little one was not feeling well. :-(    We hope she starts feeling better.

I made this dessert for our family game night.  So, I thought I would share it with everyone.   It's a Cool Lime Cheesecake. It sort of tastes like Key Lime Pie, but has more of a cheesecake taste.  They only thing I would change, is that I used a premade graham cracker crust. Next time I will make my own.  Here is the recipe.

First make up your crust:    1 cup of graham crackers, 3 Tbsp butter (melted), 2 Tbsp Splenda
Combine and then spread into 8 inch pie pan. bake 325 oven for 8 minutes

Next make the cheesecake ingredients
2/3 cup splenda
2 packages of  reduced fat cream cheese (softened)  Don't use the whipped cream cheese
1 whole egg
2 egg whites
2/3 tsp of fresh grated lime peel
3 tbsp lime juice

Beat the cream cheese and the Splenda until it's light and fluffy. Then beat in the rest of ingredients until well blended. Pour into crust.
Bake at 325 oven for 30 minutes.

Put it in the fridge for about an hour. It taste so much better cool.
Right before I served it, I added some REAL whip cream and slices of lime for looks.




This pie was so refreshing. 
Great for summer time.

Terra Cotta Pots

Okay, here is a fun little project.
   
I have wanted some potted kitchen herbs for a while.  So, made up these terra cotta pots that I can write on with chalk.  I used blackboard paint, a few shells and some craft twine.  I used masking tape (actually I used painter's tape) and then I used a sponge brush to brush on the paint.   It dried real quick.  Next I glued on some shells.  Now I am going to have some herbs growing inside as well as my outside garden.

My thoughts for this simple family type blog.

My thoughts for this blog are to share fun foods and drinks, family laughter and lots of stupid little things.  I am going to keep it light and fun.

I love to eat and enjoy cooking and baking, nothing fancy just real food and drinks.  Plus, I really love doing simple crafts and projects with my family and friends.  Like I say, sometimes it’s the stupid little things in life that we remember as our fondest memories.

Let's see how far we go with this ...........I hope you enjoy and try some of these foods, and crafts for yourself too.  If any friends or family members have any special foods or ideas they want to share, just jump on in and tell me about it.   Also if you have made something and want to share with the rest of us, just send me the pictures with the directions and I will post them for everyone else to enjoy.  


Here are a few pictures of some of the fun foods & crafts that my kids and family have done already together.  My daughter Nicole came up with the lollipop mason jars.  We made them for my granddaughter's first birthday and then again ( after my son, Soon to be daughter in law and I  tweaked them ) for their wedding shower.
We are going to add fun actiivies like these in the future.
